According to Saint Cosmas the Aetolian:
"The censer symbolizes the Virgin Mary, Theotokos. Just as the coals
are in censer and do not burn, so Virgin Mary the Theotokos received Christ and
did not burn, but was even illuminated." The fragrant smoke of incense
symbolizes the prayers of the sanctified faithful and the grace of the Holy
Spirit.
